- 4 lbs oxtails

- 2 cups of uncooked white rice
- 2 tbsp butter
- 2 tbsp chopped fresh parsley, for garnish
✅ Preheat the oven to 300°F.
✅ Heat the olive oil in a large Dutch oven or oven-safe pot over medium heat. Add the oxtails and sear on all sides until browned about 8-10 minutes.
✅ Remove the oxtails from the pot and set them aside.
✅ Add the onion and garlic to the pot and cook until the onion is translucent about 5 minutes.
✅ Add the cumin, paprika, oregano, and bay leaf to the pot and stir to combine.
✅ Return the oxtails to the pot and add the beef broth, red wine, tomato paste, and
✅ Worcestershire sauce. Bring the mixture to a boil, then reduce the heat to low and simmer for 2 hours, or until the oxtails are tender.
✅ Season the mixture with salt and pepper, to taste.
✅ Transfer the pot to the oven and cook for an additional 2 hours, or until the oxtails are falling off the bone.
✅ Meanwhile, bring the water to a boil in a saucepan over high heat. Add the rice, butter, and a pinch of salt. Stir to combine, then reduce the heat to low and simmer, covered, for 18-20 minutes, or until the rice is cooked.
