How to make vegan tacos

Let us look at the vegan tacos recipe easy that you can make at home.

Prep Time 10 minutes

Cook Time 20 minutes

Total Time 30 minutes

 

Ingredients

1 pound of cauliflower, cut into florets

1 tablespoon of olive oil

1 teaspoon of garlic powder

1 teaspoon of ground cumin

½  teaspoon of smoked paprika

¾ teaspoon of salt

For the Slaw

2 tablespoons of the Artisana raw tahini

1 tablespoon of lime juice

¼ teaspoon of garlic powder (or 1 clove, finely minced)

½ teaspoon of salt

½ teaspoon of maple syrup

12 ounces of shredded cabbage (about 3 cups)

¼ cup of freshly chopped cilantro, tightly packed

8 corn tortillas, for serving

Directions

Step#1

Let us start by preheating the oven to 400 degrees.

Step#2

Next cut the cauliflower into small pieces as you want them to cook properly.

Step#3

Toss the cauliflower in a large bowl with olive oil.

Step#4

Mix cumin, garlic powder, smoked paprika, and salt in a small bowl.

Sprinkle the mixture on top of the cauliflower and toss it well.

Take a baking sheet and spread out the cauliflower, keeping some space in between them so it can cook properly.

Step#7

Bake the cauliflower for 20 to 25 minutes until you see the color turn golden brown. Make sure you keep an eye out so that it doesn’t burn.

When the cauliflowers are cooking take a large and mix the tahini, lime juice, garlic, salt, water, and maple syrup. Keep on whisking until the mixture is creamy looking and add water 1 tablespoon at a time to make the mixture. You would need to add a total of 2 tablespoons of water.

Add shredded cabbage and cilantro to the mixture and stir well until both the veggies are well mixed with the mixture.

Let the slaw marinate for a minimum of 10 minutes before serving.

Time to prepare the corn tortillas, spray them with olive oil on both sides. Take a baking sheet and put them on a single layer.

When the cauliflower has 10 minutes left to cook start putting the tortillas in the oven for about 5 minutes on the bottom shelf. You may have to bake the tortillas in batches.

Step#14

Make sure you fold tortillas immediately after taking them out of the oven as they turn crispy quickly.

You are now ready to serve the vegan tacos. Make sure to provide a good amount of cabbage slaw with each portion of the tacos

You can store the leftover tacos refrigerated for up to 3 days when it is cooled down to room temperature and then transferred to an airtight container. You can heat the tacos in the oven again and have them. If you want to keep it for longer then you can freeze it for 2 to 3 months. You have to defrost the tacos and bring them to room temperature before reheating. Sprinkle some lime juice to get more flavor out of the slaw when reheated.

Yes, you can make tacos in an air fryer. Just follow the exact method above and then instead of putting it in the oven put it in the air fryer. You need to preheat the air fryer to 360 degrees and fry the cauliflower for 10 minutes on each side.
