Who doesn’t like having flavorful food? I don’t, I hate this kind of food, well actually that’s a lie. I love tasting food those are full of flavors. And nothing is more flavorful than Yellow rice.

I used to love ordering yellow rice with my meal when I was out with my friends. Some of them had no idea what it was but when the food came and they smelled the yellow rice they also wanted the same dish.

During the pandemic with all the restaurants closed down I started to crave yellow rice. I had no choice but to make it home. And to my surprise, it turned out just like how they make it in restaurants. What caught me off-guard was the fact that it is so easy to make.

What is Yellow Rice?

White rice when cooked with spices like turmeric or saffron makes it yellow rice. It is a mixed cultural dish which is why people either use turmeric or saffron in the dish and you can do the same thing if you want. The dish is full of flavors which is why it can be served with a lot of dishes like Pollo A La Parilla – a grilled chicken dish.

The difference between yellow and white rice is just the addition of spices which gives the yellow rice its color.

Should I toast the rice before cooking?

Yes, when cooking yellow or white rice you should always toast the rice. You can toast the rice in butter or ghee (you can buy this from any Indian grocery shop) which will give the rice a unique nutty flavor.

  • 3 tablespoons of butter.
  • 1 cup long-grain of white rice.
  • 1 teaspoon of fresh minced garlic.
  • 1 teaspoon of onion powder or dried minced onion.
  • 1 teaspoon of ground turmeric.
  • 2 cups of chicken broth.
  • 1/2 teaspoon of Kosher salt or to taste.
  • Ground black pepper to taste.
  • 2-3 tablespoons of fresh cilantro chopped.

Directions

Step #1

In a saucepan melt the butter over medium heat.

Add the rice when all of the butter has melted and then stir so the butter and the rice blend well. Cook it until the rice has become lightly brown.

When the rice turns light brown add the garlic, onion powder, and turmeric. Stir well and mix them well.

Step #4

Pour in the chicken broth when the rice and spices are well mixed. Make sure to pour the broth in slowly so there are no splashbacks.

Add the salt and pepper to taste. Let the water come to a boil.

Step #6

Put the lid on and let it simmer for 15-20 minutes on low heat.

When it is done you can dice some cilantro and add them to the rice.
